Very Vanilla Cupcakes

I have been craving cupcakes all week!  My oven has been broke since Christmas Eve and now it’s finally fixed.  So I guess that’s why I’m craving them sooooo bad. cupcakes

Very Vanilla Cupcakes

3 cups of all purpose flour

1 tbsp. baking flour

1/2 tsp. salt

2 sticks of butter at room temp

2 cups of sugar

4 eggs

2 tsp. vanilla extract

1 cup milk

Directions:

Preheat oven to 35o degrees.  Line cupcake pan with liners.  Mix  flour baking powder and salt (I mixed mine in my food processor to make the flour a little finer).    In a separate bowl, cream sugar and butter together till fluffy.  Beat in eggs one at a time.  Add vanilla.  Add dry ingredients slowly and alternate with the milk.

Pour batter into cupcake liners and bake for 20 minutes or until a toothpick comes out clean.  Decorate with your favorite icing.  Makes 24 cupcakes.

I used Wilton’s Buttercream icing with the following changes:

3 tablespoons of milk instead of 2 tablespoons

2 teaspoons of vanilla extract instead of 1 teaspoon
