I have been craving cupcakes all week! My oven has been broken since Christmas Eve and now it’s finally fixed! So I guess that’s why I’m craving them so bad.
I finally had to break down and make some cupcakes. I decided I wanted something with a nice vanilla taste to it. Nothing over powering, but definitely more vanilla than usual. This is what I came up with and I use them now every time I make vanilla cupcakes.
3 cups of all-purpose flour
1 Tbsp. baking flour
1/2 Tsp. salt
2 sticks of butter at room temp
2 cups of sugar
2 Tsp. vanilla extract
1 cup milk
Preheat oven to 350 degrees. Line cupcake pan with liners. Mix flour baking powder and salt (I mixed mine in my food processor to make the flour a little finer). In a separate bowl, cream sugar and butter together till fluffy. Beat in eggs one at a time. Add vanilla. Add dry ingredients slowly and alternate with the milk.
Pour batter into cupcake liners and bake for 20 minutes or until a toothpick comes out clean. Decorate with your favorite icing. Makes 24 cupcakes.
I used Wilton’s Buttercream icing with the following changes:
3 tablespoons of milk instead of 2 tablespoons
2 teaspoons of vanilla extract instead of 1 teaspoon
