Can I just say I may have an addiction to this salsa? Or as some people like to call it, Cowboy Caviar. It is yummy! It’s also really healthy and packs a ton of fiber with all the beans. I used canned beans in this recipe, but feel free to whip up a batch of homemade beans in the Crockpot Express Pot or Instant Pot for an even healthier version.
To let you know how yummy this is, I made this as a side for the Chili Lime Taco I made for supper and the next day I took a container full to my stepdad at work with some chips and he chowed down. I mean he ate the whole container right there! I could eat this as a mean on its own as a meal, but it’s fantastic as a side dish, or a filling snack.
I do it a little different that a lot of recipes. I actually cook the onion, peppers and corn first to get rid of that raw taste and I think putting a little char on them helps to bring out their natural flavors even more. Feel free to skip that part if you like and sometimes I make with tomatoes and sometimes I don’t. I use what I have on hand and either way it’s delicious.

Black Bean Salsa
A super yummy and healthy salsa that’s packed with tons of flavor and fiber.
Ingredients
- 1 can Pinto Beans drained
- 1 can Black Eye Peas drained
- 1 can Black Beans drained and rinsed well
- 3/4 cup Corn I use frozen or fresh
- 2 Roma tomatoes diced (Optional)
- 1/2 Red Pepper diced
- 1/2 Green Pepper diced
- 1/4 Sweet Onion diced
- 2 tbsp Cilantro diced
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Cumin
- Salt and Pepper to taste
- 1/2 Lime juice
- 1 tbsp Olive Oil
Instructions

Heat skillet with about 1 tbsp. Olive oil on medium-high heat. Add peppers and onion and cook for about 5 minutes, add corn, sprinkle with a little salt and pepper. You just want to get a little char on it but not burned. Remove to a large bowl. Add drained and rinsed beans. Add spices and cilantro and lime juice. Mix gently. Adjust salt and pepper to your taste.
