I have been craving cupcakes all week! My oven has been broken since Christmas Eve and now it’s finally fixed! So I guess that’s why I’m craving them so bad. I finally had to break down and make some cupcakes. I decided I wanted something with a nice vanilla taste to it. Nothing overpowering, but definitely more vanilla than usual. This is what I came up with and I use them now every time I make vanilla cupcakes.

Very Vanilla Cupcakes
Servings 24
Ingredients
- 3 cups of all-purpose flour
- 1 Tbsp. baking flour
- 1/2 Tsp. salt
- 2 sticks of butter at room temp
- 2 cups of sugar
- 4 eggs
- 2 Tsp. vanilla extract
- 1 cup milk
Instructions

Preheat oven to 350 degrees. Line cupcake pan with liners. Mix flour baking powder and salt (I mixed mine in my food processor to make the flour a little finer). In a separate bowl, cream sugar and butter together till fluffy. Beat in eggs one at a time. Add vanilla. Add dry ingredients slowly and alternate with the milk.

Pour batter into cupcake liners and bake for 20 minutes or until a toothpick comes out clean. Decorate with your favorite icing. Makes 24 cupcakes.

I used Wilton's Buttercream icing with these changes:

3 tablespoons of milk instead of 2

2 teaspoons of vanilla extract instead of 1

This is how Emily chose to decorate them. Aren’t they cute? She just had fun with a gel icing tube that we had. Get the kids and have a blast! Use sprinkles, or colored sugar or whatever you have on hand to decorate. Be creative!
