My Favorite Cobbler Recipe

Use any fruit you like.

Ingredients

  • 2 cups of peaches I used peaches from my freezer
  • 1 and 1/4 cups of sugar
  • 1 cup of milk
  • 1 cup of flour
  • 1/2 teaspoon of baking soda

Instructions

  1. Melt margarine in a baking dish. In a separate bowl mix sugar, flour, baking powder, and milk then pour over the margarine. Do not stir! Pour fruit on top and spread evenly but do not stir. Sprinkle a little sugar on top. Bake 350 degrees for about 50 minutes.
  2. In a small bowl combine flour and salt.  In a separate bowl combine vegetable oil and water; stir well.  Pour oil mixture into flour mixture and stir with a fork.  If mixture seems dry add a little more water.  Shape dough into a ball, cover and chill until ready to use.
  3. Roll dough out and cover cobbler.  If you use a large baking dish, you may need to double the crust recipe.  If you make a solid crust cut a few slits into it before baking so that it can vent.  Sprinkle a little sugar on top for extra sparkle.  Bake according to directions.

Recipe Notes

Optional Crust Topping: 1 cup of All-Purpose Flour 1/4 teaspoon of salt 2 tablespoons plus 2 teaspoons vegetable oil 2 to 3 tablespoons cold water In a small bowl combine flour and salt.  In a separate bowl combine vegetable oil and water; stir well.  Pour oil mixture into flour mixture and stir with a fork.  If mixture seems dry add a little more water.  Shape dough into a ball, cover and chill until ready to use.
